I have successfully set S-OFF on many Verizon HTC One M7 phones with the XTC2Clip. It's not a problem at all. Follow @scotty85's instructions a few posts up.

You need a Y-Adapter cable. It will have a micro-usb connector on one end, then it splits into a USB-A female, and USB-A male connectors.

Plug a microsd-card reader into the female port, with the clip plugged into the reader, then plug the male port into power. Make sure you've previously configured the XTC2Clip to set S-OFF in offline mode. Then boot to the bootloader, and it will scan the microsd (XTC2Clip) and apply S-OFF to the phone.

If you need further help, seach this forum for more instructions. Some may include pictures or videos of how to do this process.
