After Unlocked I-phone cannot load Itunes music?

Can anybody shows us how to put music. videos etc on the latest I tunes 7.4 to an I phone already unlocked?
I have three {3} customers alreaDY asking same question also how to,
I tried to restore it but there was a warning that it will also upgrade to new Version 1.1.1 which I cancelled it!

If you restore then may be your phoen die .
Today is not solution to do update phone after Unlock.
Carefull to do.
