I can only change only the Xtal to modify a SmartMouse (or a CardMaestro), to increase extraction speed?

Usually yes... but it depends a lot on the way the oscilator was built... do you have your schematic?
Have in mind that the oscillator is not only the crystal... usually there's an inverter IC, two ground capacitors and often a resistor.
Usually the capacitors have to be changed for better frequency statbility, but... maybe you can manage just my exchanging the crystal...
I have a MaKinterface for KI extraction and change the crystal from 3.57945 to values like 6, 10.7 and even 20Mhz without problem... but I think it has a special oscilator IC
