I bought jovy re-7500 and everything is ok ... however, the temperature sensor is a metal plate, if I could put a wire instead of metal plate because it is quite impractical to do?thank you in advance

I would get rid of that plate. It must have been a special purpose jig. You can order the correct TC from many vendors, or just get a standard K type wire TC.
