Just writing from my experience
If you stuck on 5.1 with your iPhone 4s and not able to save your unlock ticket (lockdown folder)because no jailbreak available for 5.1. Just do simple steps:
Need to have official 5.1.1 firmware downloaded and latest iTunes installed.
1. Connect phone in normal mode with your unlocked sim inside ( Sam, gevey, etc....)
2. Open iTunes and make backup.
3. Press SHIFT+UPDATE in iTunes(Don't press restore)
4. Navigate to 5.1.1 software and pres UPDATE.

After update everything should stay on your phone (photos, contacts, etc... UNLOCK)
Please do it on your own responsibility.

Don't forget to jailbreak and save LOCKDOWN folder after this.
