I have lumia 640 need to reset timer to be able to enter passcode, i know passcode, just do not want to lose data. I have infinty best dongle, i was able to enter engineering mode, but that about it. any solutions or advice? thank you

If date/time has been reset and need set correct one - try enable WiFi. If just counter - only wait, or use combine HW + SW forensic.

Get any eMMC box/device with ISP connection support.
Take dump out from a phone.
Now, if there is BitLocker has been enabled - you are near dead-end, because decrypt it will be not a trivial task. Can google about some basic.
If BitLocker not enabled - use some DataRecovery tools for extract data.

I prepare some one-button solution for BEST users, but it cover not much and not new models. Time will show, what will be after.

leave it for 24 hour with sim it will automatically correct the timing
