Good, I would like to know if anyone can help me or help with a manual so that each option of the easy jtag box and information of a more professional use is to say information of the exadecimal part, programming of memories the partitioning or everything referring to emmc and the Use of each option of them would be appreciated.

you really didnt need to know it to the core, thats the developers job. if you want to be good at it, work more, experience is the best teacher, manual can only help you get started, troubleshooting, daily cases are more important, understanding not only emmcs but SOC also, their individual characteristic, boot parameters and firmware or ROM structure is what you need to learn more.
