you are wrong, 4.1.1 and 4.1.2 not supported by v2.6, most probably in v2.7 will be

if he do unlock for example i9300 4.1.1 like i already done, phone will get imei 0499xxxxx ans sn 00000000000

about downgrading phone, i read on forums that phone get imei changed even after flashing or update with official samsung pc software
so, before do anything, do efs backup

Ok if I downgrade what version should I use? Also is there a way to backup apps and info from phone?

The best way to backup, install CWM recovery, make nandroid backup, downgrade, unlock, and final restore backuped rom.

Write to phone type, you need cwm.
