Stupid question but if you can explain...what is the different between phone till iph X and after that (XR,XS,XS max) that first are supported for icloud bypayy and second not-chipset or something else?

It depends on the CPU Security A11 and older can be injected, in other words exploit working from A6 to A11 CPU ., A12 CPU and up like XS etc.. Apple has changed security ic so you can't inject cpu.
