Any chance of creating custom firmware WITHOUT jailbreak? I just want to preserve baseband, but I don't want to have problems when restarting the iPhone.

Custom firmware does not update your baseband, so your baseband will remain the same. Whatever it is now, is what it will be on iOS 5.
