To go back to Stock Recovery, you need to flash .tar or .md5 file of your Samsung device stock recovery using ODIN. If you can't find stock recovery to be flash, your alternative is to flash stock ROM using ODIN.

You can do a complete wipe from the recovery. go to the wipe menu and click on advance options, there you'll find various options to do so.

Normal Wipe will erase everything

A normal wipe from recovery will basically erase everything and data cannot be recoverable.
If you have a custom recovery then you can erase all the partitions and in case of a stock recovery you can only erase the data partition, cache partition.

To do that your mobile should be rooted this is the only way to change the boot screen.
After rooting your smartphone there are many apps who provides best boot screen logos .

"Flashing a custom ROM" essentially means to load a different version of the Android OS. This site actually teaches it very well. A custom ROM is the full Android OS customized by the ROM builder usually to perform it faster, provide excellent battery-life or add new features.
