Hi,
The +3V power supply does not connect to the phone, if you look at the schematic at gsmhacking website, you notice that the supply for the MAX232 has a 3.3V zenner diode to clamp the IC supply voltage at 3.3V, there is where you should apply the 3V.
If you build the schematic like the one in gsmhacking you should have no problems at all!!!
