iPhone 7 plus stuck on apple logo or boot loop can cause by speaker flex cable.Just disconnect it and try to flash it. Even if your phone was working before update still try this.
Next reason is audio chip.

Generally speaking, a professional iPhone system recovery like Joyoshare UltFix iOS system recovery, 3uTools, etc can repair iPhone stuck on the Apple logo successfully without data loss. If not, put your iPhone into recovery mode and restore it with iTunes again. Suppose the issue lingers, check your iPhone hardware in the Apple store.
