My P900 just can't pass through the power menu... Can anyone suggest me how to reformat it in this menu?

Install the new update from sonyerricsson.. that will get you to format and then if u backed up the phone data then restore it via USB.

How do you install new update when phone cannot go through start up logo ?

I had the same problem, but when you go through the SE update form SE website it will regonize ur phone and install through USB. You might want to gather up some info before u do the update like firmware version etc....

Its called RECOVERY MODE on the update service

And do i have to be online to have my phone(P900) updated ?

U have to be online to donwload the new update from SE website. But after u download it in ur system then u dont have to. Java apps will automatically starts install the update but it's recommended to stay online while the updates completes.
