Simple Question Regarding Unlocked iPhone 5S

I've never before owned a smartphone, but have bought my wife an iPhone 5S for Christmas. I bought it directly from Apple, unlocked, with a T-Mobile SIM card pre-installed. Please let me know if the following is correct:

I plan to contact T-Mobile after she opens the present and have them activate the phone on their network, using the $50/month plan. Their SIM is already in the phone, so this should be straightforward.

If I don't like T-Mobile's service, for whatever reason, can I get on Amazon and buy an AT&T SIM (for less than $6), pop out the T-Mobile SIM, pop in the AT&T SIM, then contact AT&T to have them activate the phone on their network?

Is this a workable plan, or am I missing something?

You don't even have to buy a $6 SIM. You can walk in the store or call AT&T directly and they will expedite a SIM to you for free.

Followup Question

Because AT&T and T-Mobile have different coverage areas, is it possible to have a monthly prepaid account with both simultaneously? Then just switch out the SIM cards to change carriers?

I realize the phone numbers would probably be different, but would the carrier even need to know that you are switching back and forth between carriers, as you move from one coverage area to another?
